制法:
1.把肉料分别切薄片,有味的焯水后漂凉装盘;
2.其余各料另锅焯水,漂凉后切段装盘;
3.香菜、葱切碎和油辣椒及烫过的米线一同上桌;
4.鸡油烧至7成热时装入碗中,倒入烧开的清汤,加调料上桌;
5.食时先将肉片烫至白色,下绿菜稍烫,再下米线,撒少许葱花、香菜即成 。
